Dinner for two just got tastier
DOUGH – it’s so simple, good dough plus good toppings plus a good amount of time equals good pizza. And over in the Northern Quarter, the four Italian friends at Noi Quattro know all about good dough, taking the best 00 flour, adding the right amount of yeast, mixing and kneading just as much as is necessary, then letting the whole lot sit and slowly ferment for at least 24 hours, which helps to make it really easy to digest.
Once ready, they top it with the finest ingredients from their country, show it their genuine Italian pizza oven for no more than 90 seconds, and serve. How you eat it is up to you: cut it with a knife and fork or tear it with your fingertips, it tastes great either way – especially when we have £50 for you to take off your bill.
Aside from the base, Noi Quattro’s Neapolitan pizza is authentic thanks to the top-notch veg, meats, cheeses and other flavours especially imported from Italy. Veg? Think San Marzano d.o.p. and cherry tomatoes and porcini, chestnut and portobello mushrooms. Meat? Parma ham, spianata calabra (spicy salami) and speck (dry-cured smoked ham); anchovies for the fish-lover. Cheese? Mozzarella fior di latte, Parmesan, smoked scamorza, gorgonzola. Flavours? Fresh and dried herbs like basil, oregano rosemary, capers, olives, garlic, chilli and extra virgin olive oil.
