Here at The Pasta Factory, we pride ourselves on our constantly evolving menus showcasing a genuine taste of Italy — we’re nearing 60 since opening on Shudehill in the city centre just over three-and-a-half years ago, and there are still so many types of freshly made pasta that we still want to let you try.
Shape is important, from radiatori — ridged like an old-fashioned radiator — to ravioli — square, triangular, round or sunny. Shade is also important, and we add natural colours like red wine, purple beetroot, green basil and black squid ink. Sauce is of course very important, from our creamy and delicate vegan courgettes and cashews to our rich and meaty pork cheek and tomatoes. We even serve pasta for dessert — the chocolate-flavoured Trottole al Cioccolato.
