The chef and restaurateur behind Hispi and Wreckfish has eyes on Manchester city centre and Merseyside

The region's busiest restauranteur, Gary Usher, is set to reveal plans to open two new bistros in the North West.

The first, Pinion, is due to open in Prescot town centre, Merseyside following a crowdfunding campaign. Confidential understands that the second, Kala, will open in Manchester city centre (the rumour is King Street).

The two new bistros will grow Usher's 'Elite Bistros of the World' empire to six, joining AA Restaurant of the Year 2014, Sticky Walnut, in Chester; Burnt Truffle in Heswall; Hispi in Didsbury, and his latest, Wreckfish in the Ropewalks district of Liverpool.

Speaking about Pinion via Instagram, Usher wrote: "This place will be small but it's an opportunity to really be part of their plan to regenerate the area.

"There's nothing wrong with it at the minute, it's just quiet and people have stopped using the high street in favour of a big shopping complex a few miles away.

"I'm really really fucking nervous about doing it because it's a business and it will HAVE to make money, but I'm also really fucking excited to possibly be part of something that a load of people might be really proud of."

He added: "We're being offered lots of sites in city centres at the minute. We're being offered cash to do it too."

Confidential hopes for Usher's sake it's a decent wedge, because opening two at the same time is going to be a slog. But then, he does have form and energy to burn. His food is bloody good too. We say, good luck to him.
