Can Bluebird Bakery help prove the market's worth?

An artisan bakery with sites on York’s historic Shambles and in Malton has announced its third shop, inside Leeds’ Kirkgate Market.

Specialising in organic bread, Bluebird Bakery uses nothing processed and nothing artificial in their baking. “We use traditional methods and simple, wholesome ingredients” says owner Al Kippax.

“This is just how bread used to be made, be that sourdough, rye, ciabatta, or a good old traditional bloomer”

As well as bread, Bluebird Bakery applies their traditional methods and organic ethics to baking sweet pastries, brownies, sausage rolls, and vegetarian bakes.

“We’re thrilled to be joining some of the best food producers in Europe’s largest undercover market” adds Al. “Leeds is a buzzing, vibrant city - and nowhere embodies that energy more than Kirkgate market” adds co-owner Nicky Kippax.

Additions like Bluebird Bakery, which showcase and celebrate local producers, are exactly what Kirkgate Market needs to re-establish itself as a relevant, must-visit destination.
